Sumatra Grade 1 Gayo Wet Hulled

Sumatra Organic Mandheling and other Sumatran coffees are uniquely processed. In most washed coffee origins, beans are parchment-dried after fermentation and the parchment is milled off the beans when they are dry. In Sumatra, the bean is still very wet when the parchment is hulled. The hulled beans are quite soft, white, and spongy. These beans, termed “Wet Hulled”, or “Giling Basah”, are then sun-dried. The unique Sumatran climate subjects the drying beans to fierce tropical sun, interrupted by torrential thunder showers. This slow, inconsistent drying provides the essence of a Sumatra Mandehling, both in flavor and appearance.
